Is there a way in a multiple choice to have a min number of choices before submitting?
Yes, there is a way to set the number of options can a user selects for the multiple choice element.
For this you have to go to the Advance validation section of the Multiple choice and from here select the Max length validation and then in max lenth validation type the no. of options. As you can see on the screenshot below:
